Ingredients (Serves 2–3)
- 1 cup besan (gram flour)
- 1 small onion – finely chopped
- 1 small tomato – finely chopped
- 1–2 green chilies – finely chopped (optional)
- 2–3 tbsp fresh coriander leaves – chopped
- ½ tsp ajwain (carom seeds)
- ½ tsp turmeric powder
- ½ tsp red chili powder (optional)
- Salt – to taste
- Water – as needed (about ¾–1 cup)
- Oil or ghee – for cooking
Instructions
- Prepare Batter
- In a mixing bowl, add besan, turmeric, chili powder, ajwain, and salt.
- Add chopped onion, tomato, chilies, and coriander leaves.
- Slowly add water and whisk to make a smooth, lump-free batter (like pancake batter, slightly thick but pourable).
- Heat Pan
- Place a non-stick or iron tawa/griddle on medium heat.
- Grease lightly with oil.
- Cook Chilla
- Pour a ladle of batter in the center and spread gently into a round shape (like a dosa).
- Drizzle a few drops of oil on the edges.
- Cook for 2–3 minutes until the underside is golden.
- Flip and cook the other side for 1–2 minutes.
- Serve
