  • 1 cup besan (gram flour)
  • 1 small onion – finely chopped
  • 1 small tomato – finely chopped
  • 1–2 green chilies – finely chopped (optional)
  • 2–3 tbsp fresh coriander leaves – chopped
  • ½ tsp ajwain (carom seeds)
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (optional)
  • Salt – to taste
  • Water – as needed (about ¾–1 cup)
  • Oil or ghee – for cooking

Instructions

  1. Prepare Batter
    • In a mixing bowl, add besan, turmeric, chili powder, ajwain, and salt.
    • Add chopped onion, tomato, chilies, and coriander leaves.
    • Slowly add water and whisk to make a smooth, lump-free batter (like pancake batter, slightly thick but pourable).
  2. Heat Pan
    • Place a non-stick or iron tawa/griddle on medium heat.
    • Grease lightly with oil.
  3. Cook Chilla
    • Pour a ladle of batter in the center and spread gently into a round shape (like a dosa).
    • Drizzle a few drops of oil on the edges.
    • Cook for 2–3 minutes until the underside is golden.
    • Flip and cook the other side for 1–2 minutes.
