Ingredients

  • 4–5 medium ripe tomatoes (roughly chopped)
  • 1 medium onion (sliced)
  • 4–5 garlic cloves
  • 1 small carrot (optional, for sweetness)
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 bay leaf
  • 1 cup water or vegetable stock
  • ½ tsp black pepper
  • 1 tbsp sugar (adjust to taste)
  • Salt to taste
  • 2 tbsp fresh cream (optional for creaminess)
  • Croutons (for serving)

Instructions

1. Sauté the base

  1. Heat butter + oil in a pan.
  2. Add bay leaf, then onions and garlic—sauté until soft.
  3. Add chopped tomatoes and carrot. Cook 5–7 minutes.

2. Cook

  1. Add 1 cup water/stock.
  2. Cover and cook for 10–12 minutes until tomatoes turn soft.

3. Blend

  1. Cool slightly, remove bay leaf, and blend to a smooth puree.

4. Strain

  1. Strain the soup to get a silky, restaurant-style texture.

5. Simmer & season

  1. Pour back into the pot.
  2. Add salt, black pepper, and sugar.
  3. Simmer for 2–3 minutes.

6. Finish

  1. Add cream for richness (optional).
  2. Serve hot with croutons.

Tips for Perfect Tomato Soup

  • Use ripe red tomatoes for best flavor.
  • Add a pinch of red chilli flakes for spice.
  • For thicker soup, add ½ tbsp cornflour mixed in water.
