Ingredients
- 4–5 medium ripe tomatoes (roughly chopped)
- 1 medium onion (sliced)
- 4–5 garlic cloves
- 1 small carrot (optional, for sweetness)
- 1 tbsp butter
- 1 tbsp oil
- 1 bay leaf
- 1 cup water or vegetable stock
- ½ tsp black pepper
- 1 tbsp sugar (adjust to taste)
- Salt to taste
- 2 tbsp fresh cream (optional for creaminess)
- Croutons (for serving)
Instructions
1. Sauté the base
- Heat butter + oil in a pan.
- Add bay leaf, then onions and garlic—sauté until soft.
- Add chopped tomatoes and carrot. Cook 5–7 minutes.
2. Cook
- Add 1 cup water/stock.
- Cover and cook for 10–12 minutes until tomatoes turn soft.
3. Blend
- Cool slightly, remove bay leaf, and blend to a smooth puree.
4. Strain
- Strain the soup to get a silky, restaurant-style texture.
5. Simmer & season
- Pour back into the pot.
- Add salt, black pepper, and sugar.
- Simmer for 2–3 minutes.
6. Finish
- Add cream for richness (optional).
- Serve hot with croutons.
