Ingredients
- 4 large potatoes (Russet or any starchy potato)
- Cold water (for soaking)
- 1–2 tbsp cornflour (optional, for extra crispiness)
- Salt (to taste)
- Oil (for frying)
Instructions
1. Prepare the Potatoes
- Peel the potatoes.
- Cut into thin strips (¼ inch thick).
- Rinse in cold water to remove excess starch.
- Soak for 20–30 minutes in cold water.
→ This makes fries crispier.
2. Par-Boil (Optional but Recommended)
- Boil water in a pot with a pinch of salt.
- Add potato strips and boil for 3–4 minutes only (NOT fully cooked).
- Drain gently and let them dry completely.
3. First Fry (Low Heat)
- Heat oil on medium flame.
- Fry potatoes at 150°C / 300°F for 5–6 minutes.
- They should turn pale and soft, not golden.
- Remove and let them cool.
→ You can refrigerate for 15 minutes for better results.
4. Second Fry (High Heat for Crispiness)
- Increase heat to 190°C / 375°F.
- Fry the potatoes again until crispy and golden.
- Remove and immediately sprinkle salt.
Serving
