Oil-Free Potatoes Recipe
If you like simple foods you are going to LOVE these Oil-Free Potatoes! Peasant farmers created this dish in the Andalusian region of Southern Spain – and it’s still popular today!
Here’s a simple recipe for oil-free roasted potatoes that is both healthy and delicious:
Ingredients:
- 4-5 medium potatoes (any variety, russet or red work well)
- 1-2 teaspoons of garlic powder
- 1 teaspoon of onion powder (optional)
- 1 teaspoon of paprika or smoked paprika (for a smoky flavor)
- 1 teaspoon of dried oregano or thyme
- Salt and pepper to taste
- Fresh herbs for garnish (like parsley or cilantro, optional)
- Lemon juice (optional, for a tangy finish)
Instructions:
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Prepare the Potatoes:
- Wash and scrub the potatoes thoroughly.
- Cut them into evenly sized cubes or wedges for even cooking. The thickness of the pieces should be about 1 inch.
- Season the Potatoes:
- In a large mixing bowl, toss the potatoes with garlic powder, onion powder (if using), paprika, oregano, salt, and pepper.
- Make sure the potatoes are evenly coated with the seasoning.
- Arrange on Baking Tray:
- Place the seasoned potatoes in a single layer on a parchment-lined or silicone-lined baking sheet. This prevents sticking without needing oil.
- Bake:
- Bake the potatoes in the preheated oven for 30-40 minutes, flipping them halfway through to ensure even cooking.
- You’ll know they’re done when they are golden brown and crispy on the outside and tender on the inside.
- Garnish and Serve:
- Once the potatoes are cooked, remove them from the oven and let them cool slightly.
- Garnish with fresh herbs or a drizzle of lemon juice for extra flavor, if desired.
Tips:
- To make the potatoes extra crispy, soak them in cold water for about 30 minutes before seasoning. This helps to remove excess starch.
- Feel free to add other spices like cumin or chili powder for a different flavor profile.
