Cheese corn samosas are a delightful twist on the traditional samosas, offering a creamy, cheesy filling with the sweetness of corn. Here’s a simple recipe you can try:
Ingredients:
For the filling:
- 1 cup sweet corn kernels (fresh or frozen)
- 1 cup grated cheese (cheddar or any melting cheese of your choice)
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon oil
- Fresh coriander leaves, chopped (for garnish, optional)
For the samosa pastry:
- 1 cup all-purpose flour (maida)
- 2 tablespoons oil or ghee
- Water, as needed
- Salt to taste
For frying:
- Oil for deep frying
Instructions:
Making the Filling:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies. Sauté until onions turn translucent.
- Add ginger-garlic paste and sauté for another minute.
- Add sweet corn kernels and sauté for 3-4 minutes until they are cooked.
- Add garam masala and salt. Mix well.
- Turn off the heat and let the mixture cool down slightly.
- Once cooled, add grated cheese and mix until well combined.
Making the Samosa Pastry:
- In a mixing bowl, combine all-purpose flour, salt, and oil or ghee. Mix well.
- Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for 15-20 minutes.
Assembling the Samosas:
- Divide the dough into equal-sized balls and roll each ball into a thin oval or round shape.
- Cut each oval or round shape into two equal halves.
- Take one half and fold it into a cone shape, sealing the edges with water.
- Fill the cone with the prepared cheese corn filling.
- Seal the open edge of the cone by applying water and pressing gently to close.
- Repeat the same process for the remaining dough and filling.
Frying the Samosas:
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, gently slide in the prepared samosas, a few at a time.
- Fry until they turn golden brown and crisp on all sides, turning occasionally.
- Remove the fried samosas using a slotted spoon and drain excess oil on a paper towel.
- Serve hot with your favorite chutney or sauce.
