Cheese corn samosas are a delightful twist on the traditional samosas, offering a creamy, cheesy filling with the sweetness of corn. Here’s a simple recipe you can try:

Ingredients:

For the filling:

  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 cup grated cheese (cheddar or any melting cheese of your choice)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon oil
  • Fresh coriander leaves, chopped (for garnish, optional)

For the samosa pastry:

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons oil or ghee
  • Water, as needed
  • Salt to taste

For frying:

  • Oil for deep frying

Instructions:

Making the Filling:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and green chilies. Sauté until onions turn translucent.
  3. Add ginger-garlic paste and sauté for another minute.
  4. Add sweet corn kernels and sauté for 3-4 minutes until they are cooked.
  5. Add garam masala and salt. Mix well.
  6. Turn off the heat and let the mixture cool down slightly.
  7. Once cooled, add grated cheese and mix until well combined.

Making the Samosa Pastry:

  1. In a mixing bowl, combine all-purpose flour, salt, and oil or ghee. Mix well.
  2. Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for 15-20 minutes.

Assembling the Samosas:

  1. Divide the dough into equal-sized balls and roll each ball into a thin oval or round shape.
  2. Cut each oval or round shape into two equal halves.
  3. Take one half and fold it into a cone shape, sealing the edges with water.
  4. Fill the cone with the prepared cheese corn filling.
  5. Seal the open edge of the cone by applying water and pressing gently to close.
  6. Repeat the same process for the remaining dough and filling.

Frying the Samosas:

  1. Heat oil in a deep frying pan over medium heat.
  2. Once the oil is hot, gently slide in the prepared samosas, a few at a time.
  3. Fry until they turn golden brown and crisp on all sides, turning occasionally.
  4. Remove the fried samosas using a slotted spoon and drain excess oil on a paper towel.
  5. Serve hot with your favorite chutney or sauce.
