Seviyan Kheer Recipe
Seviyan kheer also known as vermicelli kheer is a must at any festival at our place. This creamy seviyan kheer is a North Indian sweet made with wheat vermicelli, milk, sugar, dry fruits and flavored with spices. This incredibly easy recipe of semiya kheer comes together in 20 minutes and makes for an excellent dessert or sweet that can be eaten as is or served with a North Indian meal.
📝 Ingredients:
- 1 cup roasted vermicelli (seviyan)
- 1 litre full-fat milk
- ½ cup sugar (adjust to taste)
- 2 tbsp ghee (clarified butter)
- 10–12 cashews
- 10–12 almonds (sliced)
- 10–12 raisins
- 4–5 green cardamom pods (crushed)
- A few strands of saffron (optional)
👨🍳 Method:
- Roast Vermicelli(if not pre-roasted)
- Heat 1 tbsp ghee in a pan.
- Add vermicelli and roast on low flame until golden brown.
- Remove and keep aside.
- Fry Dry Fruits
- In the same pan, add 1 tbsp ghee.
- Fry cashews, almonds, and raisins until golden.
- Keep aside for garnish.
- Boil the Milk
- In a deep pan or kadai, bring milk to a boil.
- Simmer for 5–7 minutes, stirring occasionally.
- Cook Vermicelli
- Add roasted vermicelli to the milk.
- Cook for 8–10 minutes on low flame until soft.
- Sweeten the Kheer
- Add sugar and stir well.
- Add cardamom powder and saffron strands (optional).
- Simmer for another 5 minutes.
- Garnish & Serve
- Add fried dry fruits and mix well.
- Serve warm or chilled.
🍽️ Tips:
- Adjust thickness by adding more milk if needed.
- For a richer taste, add a few tablespoons of condensed milk.
- Kheer thickens as it cools, so keep it slightly runny while cooking.
