Here’s a simple and delicious white bean soup recipe that’s perfect for a cozy meal:


  • 2 cans (15 ounces each) white beans (such as cannellini or great northern beans), drained and rinsed
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 cup water
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped (optional)
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley, chopped (for garnish)


  1. Prepare the Base:
    • Heat the olive oil in a large pot over medium heat.
    • Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
    • Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  2. Season and Simmer:
    • Stir in the dried thyme, dried rosemary, and bay leaf.
    • Add the drained and rinsed white beans, vegetable broth, and water.

    • If using spinach or kale, stir it into the soup and cook for an additional 5 minutes until the greens are wilted and tender.
  5. Finish and Serve:
    • Remove the bay leaf from the soup.
    • Stir in the lemon juice, if using, to brighten the flavors.
    • Season with salt and pepper to taste.
