  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes (with liquid)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: 1-2 cups chopped kale or spinach

Instructions:

  1. Prepare Vegetables: Start by washing and chopping all the vegetables.
  2. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic. Sauté until the onions are translucent, about 5 minutes.
