  • 1 medium head of cabbage, chopped
  • 1 large onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes (with liquid)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: 1-2 cups chopped kale or spinach


  1. Prepare Vegetables: Start by washing and chopping all the vegetables.
  2. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic. Sauté until the onions are translucent, about 5 minutes.
  3. Add Vegetables: Add the carrots, celery, and bell peppers to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Add Cabbage and Tomatoes: Stir in the chopped cabbage and the can of diced tomatoes (including the liquid).
