  • 1/4 cup of ghee or oil
  • Water (as needed)
  • 2 cups of chickpeas (chana), soaked overnight
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, chopped
  • 1 teaspoon of ginger paste
  • 1 teaspoon of garlic paste
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of red chili powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of garam masala
  • Salt (to taste)
  • Oil (for frying)

Step 1: Making the Puri

  1. In a mixing bowl, combine the all-purpose flour, salt, sugar, and baking powder.
  2. Add ghee or oil and mix well until the mixture resembles breadcrumbs.
  3. Gradually add water and knead the dough until smooth and elastic.
  4. Cover the dough and let it rest for at least 30 minutes.
  5. Divide the dough into small balls and roll each ball into a small circle.
  6. Heat oil in a deep frying pan and fry the puris until they are golden brown and puffed up.
  7. Remove the puris from the oil and drain on a paper towel to remove excess oil.

Step 2: Cooking the Chana

  1. Drain the soaked chickpeas and rinse them with fresh water.
  2. In a pressure cooker, add the chickpeas along with enough water to cover them.
  3. Cook the chickpeas for about 15-20 minutes or until they are tender.
  4. In a separate pan, heat oil and add cumin seeds.
  5. Once the cumin seeds start to splutter, add the chopped onions and sauté until they turn golden brown.
  6. Add ginger paste, garlic paste, and green chilies to the pan and cook for a minute.
  7. Add the chopped tomatoes and cook until they are soft and mushy.
  8. Now, add the red chili powder, turmeric powder, garam masala, and salt. Mix well.
  9. Add the cooked chickpeas to the pan and mix everything together.
  10. Cook the chana on low heat for about 10 minutes, allowing the flavors to blend together.
  11. Garnish with fresh coriander leaves.

Step 3: Making the Halwa

  1. In a separate pan, heat ghee or oil.
  2. Add semolina (suji) to the pan and roast it until it turns golden brown and gives off a nutty aroma.
  3. Gradually add sugar and water to the pan, stirring continuously to avoid any lumps.
  4. Cook the mixture on low heat until the halwa thickens and starts to leave the sides of the pan.
  5. Remove the halwa from heat and garnish with sliced almonds and pistachios.
