Ingredients:
- 2 cups of all-purpose flour
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1/2 teaspoon of baking powder
- 1/4 cup of ghee or oil
- Water (as needed)
- 2 cups of chickpeas (chana), soaked overnight
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, chopped
- 1 teaspoon of ginger paste
- 1 teaspoon of garlic paste
- 1 teaspoon of cumin seeds
- 1 teaspoon of red chili powder
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of garam masala
- Salt (to taste)
- Oil (for frying)
Instructions:
Step 1: Making the Puri
- In a mixing bowl, combine the all-purpose flour, salt, sugar, and baking powder.
- Add ghee or oil and mix well until the mixture resembles breadcrumbs.
- Gradually add water and knead the dough until smooth and elastic.
- Cover the dough and let it rest for at least 30 minutes.
- Divide the dough into small balls and roll each ball into a small circle.
- Heat oil in a deep frying pan and fry the puris until they are golden brown and puffed up.
- Remove the puris from the oil and drain on a paper towel to remove excess oil.
Step 2: Cooking the Chana
- Drain the soaked chickpeas and rinse them with fresh water.
- In a pressure cooker, add the chickpeas along with enough water to cover them.
- Cook the chickpeas for about 15-20 minutes or until they are tender.
- In a separate pan, heat oil and add cumin seeds.
- Once the cumin seeds start to splutter, add the chopped onions and sauté until they turn golden brown.
- Add ginger paste, garlic paste, and green chilies to the pan and cook for a minute.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Now, add the red chili powder, turmeric powder, garam masala, and salt. Mix well.
- Add the cooked chickpeas to the pan and mix everything together.
- Cook the chana on low heat for about 10 minutes, allowing the flavors to blend together.
- Garnish with fresh coriander leaves.

- In a separate pan, heat ghee or oil.
- Add semolina (suji) to the pan and roast it until it turns golden brown and gives off a nutty aroma.
- Gradually add sugar and water to the pan, stirring continuously to avoid any lumps.
- Cook the mixture on low heat until the halwa thickens and starts to leave the sides of the pan.
- Remove the halwa from heat and garnish with sliced almonds and pistachios.
