Litti Chokha Recipe

Here’s a traditional Litti Chokha recipe, a classic dish from Bihar (also popular in Jharkhand and Eastern UP). It combines Litti, a stuffed whole wheat ball roasted over fire or in oven, with Chokha, a mashed spiced mix of roasted vegetables.


🌾 Ingredients

For Litti dough

  • 2 cups whole wheat flour
  • 2 tbsp ghee (clarified butter) or oil
  • ¼ tsp carom seeds (ajwain)
  • Salt to taste
  • Water (to knead)

For Sattu filling

  • 1 cup sattu (roasted gram flour)
  • 2 tbsp mustard oil (or any oil)
  • 1 small onion (finely chopped)
  • 2-3 garlic cloves (grated or finely chopped)
  • 1-2 green chillies (finely chopped)
  • 2 tbsp coriander leaves (chopped)
  • ½ inch ginger (grated)
  • ½ tsp nigella seeds (kalonji) – optional
  • ½ tsp carom seeds (ajwain)
  • Juice of 1 lemon
  • Salt to taste
  • A little water (just to moisten if needed)

For Chokha

  • 2 medium eggplants (baingan)
  • 2 medium tomatoes
  • 2 medium potatoes (boiled)
  • 1 small onion (finely chopped)
  • 2-3 garlic cloves (crushed)
  • 2-3 green chillies (chopped)
  • 2 tbsp coriander leaves (chopped)
  • 2 tbsp mustard oil (or regular oil)
  • Salt to taste
  • Juice of ½ lemon

👩‍🍳 Method

1️⃣ Prepare the dough

  • Mix wheat flour, ajwain, salt and ghee in a bowl.
  • Add water slowly and knead into a firm dough.
  • Cover and let it rest for 15-20 mins.

2️⃣ Prepare the sattu filling

  • In a bowl, add sattu, onions, garlic, green chillies, coriander leaves, kalonji, ajwain, mustard oil, lemon juice, and salt.
  • Mix well. If too dry, sprinkle a little water (don’t make it sticky).

3️⃣ Shape the littis

  • Divide dough into balls.
  • Flatten one ball, place 1-2 tsp sattu filling inside.
  • Gather edges and seal well, then roll gently between palms to make smooth balls.

4️⃣ Cook the littis

Traditional way:

  • Roast over coal fire or cow dung cakes till evenly browned, rotating often.

Stovetop/oven method:

  • Bake in a preheated oven at 200°C (392°F) for 30-35 mins, turning in between, till evenly golden.
  • Or cook on tawa on low flame, rotating to cook all sides.
  • Finally, dip hot littis in melted ghee or brush generously.

5️⃣ Prepare the chokha

  • Roast eggplants and tomatoes directly over flame or in oven until skin is charred and pulp is soft.
  • Peel off the charred skin. Mash pulp in a bowl.
  • Add boiled mashed potatoes, onions, garlic, green chillies, coriander leaves, mustard oil, lemon juice, and salt.
  • Mix well.

🥘 Serving

  • Serve hot littis with chokha.
  • Pour extra ghee on littis for authentic taste.
  • Enjoy with pickles and raw onions on the side.

Tips:

  • For richer taste, always use mustard oil in chokha & filling.
  • Littis can also be shallow fried in ghee for a richer version (called “fried litti”).
  • Adjust spiciness by changing green chilli quantity.
