Ingredients:

  • 1 cup dried chickpeas (soaked overnight)
  • 2 medium-sized onions (finely chopped)
  • 2 tomatoes (pureed)
  • 2 green chilies (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dry mango powder)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves (for garnishing)
  • 4-6 kulche (store-bought or homemade)

Instructions:

  1. Drain the soaked chickpeas and rinse them thoroughly. In a pressure cooker, add the chickpeas along with enough water to cover them. Cook for about 15-20 minutes or until they are soft and tender.
  2. In a separate pan, heat oil and add cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
  4. Now, add the tomato puree and cook until the oil separates from the masala.
  5. Next, add turmeric powder, red chili powder, garam masala, amchur, and salt. Mix well and cook for a few minutes to let the spices blend together.
  6. Drain the cooked chickpeas and add them to the masala. Mix everything well and let it simmer for 10-15 minutes on low heat.
  7. Garnish the Chole with fresh coriander leaves.
