  • 1 cup dried chickpeas (soaked overnight)
  • 2 medium-sized onions (finely chopped)
  • 2 tomatoes (pureed)
  • 2 green chilies (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dry mango powder)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves (for garnishing)
  • 4-6 kulche (store-bought or homemade)

  1. Drain the soaked chickpeas and rinse them thoroughly. In a pressure cooker, add the chickpeas along with enough water to cover them. Cook for about 15-20 minutes or until they are soft and tender.
  2. In a separate pan, heat oil and add cumin seeds. Once they start spluttering, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
  4. Now, add the tomato puree and cook until the oil separates from the masala.
  5. Next, add turmeric powder, red chili powder, garam masala, amchur, and salt. Mix well and cook for a few minutes to let the spices blend together.
  6. Drain the cooked chickpeas and add them to the masala. Mix everything well and let it simmer for 10-15 minutes on low heat.
  7. Garnish the Chole with fresh coriander leaves.
  8. For the Kulche, you can either buy them from a store or make them at home. If making at home, prepare the dough by mixing all-purpose flour, yogurt, baking powder, salt, and water. Knead the dough until it becomes soft and pliable. Divide it into small portions and roll them into oval-shaped flatbreads.
  9. Heat a tawa or griddle and cook the Kulche on both sides until they are golden brown and cooked through.
  10. Serve the hot and spicy Chole with the warm and fluffy Kulche. You can also add some chopped onions and lemon wedges on the side for extra flavor.

Chole Kulche is a delightful combination of flavors and textures. The spicy and tangy Chole pairs perfectly with the soft and slightly crispy Kulche.
