  • For the Vada:
  • – 4 medium-sized potatoes
  • – 1 teaspoon mustard seeds
  • – 1 teaspoon cumin seeds
  • – 1 teaspoon ginger-garlic paste
  • – 2-3 green chilies, finely chopped
  • – A handful of curry leaves
  • – 1/2 teaspoon turmeric powder
  • – Salt to taste
  • – Oil for frying
  • For the Pav:
  • – 4 pav buns
  • – Butter for toasting
  • For the Chutneys:
  • – Green chutney (made with coriander, mint, green chili, and lemon juice)
  • – Tamarind chutney (made with tamarind pulp, jaggery, and spices)


  1. Boil the potatoes until they are soft and mash them well.
  2. In a pan, heat some oil and add mustard seeds and cumin seeds.
  3. Once they start spluttering, add ginger-garlic paste, green chilies, and curry leaves. Sauté for a minute.
  4. Add turmeric powder and mashed potatoes. Mix well and cook for a few minutes.
  5. Season with salt and let the potato mixture cool.
  6. Divide the potato mixture into small balls and flatten them to make vadas.
  7. Heat oil in a deep pan for frying. Carefully place the vadas in the hot oil and fry until they turn golden brown and crispy.
  8. Remove the vadas from the oil and drain them on a kitchen towel to remove excess oil.
  9. Now, let’s prepare the pav buns. Slit the pav buns horizontally, but not all the way through.
  10. Apply butter on the inside of the buns and toast them on a hot griddle until they are golden brown.

  12. Place a vada in the center and close the pav.
  13. Repeat the process for the remaining vadas and pav buns.
