🌾 Soft Idli Recipe

Ingredients

  • 2 cups idli rice (or regular rice)
  • 1 cup urad dal (split black gram)
  • 1 tsp fenugreek seeds (optional)
  • Salt to taste
  • Water as needed
  • Oil (for greasing idli plates)

Instructions

1. Soaking

  • Wash rice 2–3 times and soak for 4–5 hours.
  • Wash urad dal + fenugreek seeds and soak for 3–4 hours.

2. Grinding

  • Grind urad dal to a fluffy, smooth paste using little water.
  • Grind rice to a slightly coarse paste.
  • Mix both pastes together, add salt, and rest.

3. Fermentation

  • Keep batter covered in a warm place for 8–10 hours (till it doubles).

4. Steaming

  • Grease idli plates with oil.
  • Pour batter and steam for 10–12 minutes.
  • Let it cool for 2 minutes and gently remove the idlis.

🥣 Traditional Sambar Recipe

Ingredients

For boiling dal:

  • ½ cup toor dal
  • ½ tsp turmeric
  • 2 cups water

Vegetables (any):

  • Drumstick, onion, carrot, pumpkin, tomatoes, brinjal

For tempering:

  • 2 tbsp oil/ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 pinch hing (asafoetida)
  • 10–12 curry leaves
  • 2–3 dry red chillies

Other ingredients:

  • 2 tbsp sambar powder
  • Tamarind (small lemon-sized ball, soaked & juice extracted)
  • Salt to taste
  • Jaggery (optional, ½ tsp)

Instructions

1. Cook the Dal

  • Pressure cook toor dal with turmeric until soft.
  • Mash it well.

2. Cook the Vegetables

  • In a pot, add vegetables, tamarind water, salt, turmeric.
  • Cook until vegetables turn soft.

3. Add Dal & Spices

  • Add mashed dal into the pot.
  • Add sambar powder.
  • Adjust water for desired consistency.

4. Tempering (Tadka)

  • Heat oil/ghee in a pan.
  • Add mustard, cumin, hing, red chillies, curry leaves.
  • Pour tadka over the sambar.

5. Final Touch

  • Add a pinch of jaggery (optional).
  • Boil for 3–4 minutes.
