Saag Aloo Recipe – Spinach and Potato Curry Recipe

How to Make Saag Aloo Recipe – A super quick, easy, healthy and vegan Indian curry made with spinach, potatoes and some Indian spices.

Ingredients

  1. 2 cups Cubed Potatoes
  2. 2 cups Chopped Spinach
  3. 1 Onion medium sized
  4. 2 – 3 Green Chillies
  5. 2 Dried Red Chillies
  6. 1 tsp Coriander Powder
  7. ½ tsp Cumin Powder
  8. ¼ tsp Turmeric Powder
  9. ½ tsp Mustard Seeds
  10. ½ tsp Cumin Seeds
  11. 2 tbsp Oil
  12. Salt to taste
  13. 1 tbsp Lemon Juice or as needed (optional)

Instructions

  1. Heat oil in a pan and add the mustard seeds and cumin seeds.
  2. When the seeds stop popping, add the slit green chillies and red chillies and fry for a couple of seconds.
  3. Add the chopped onion and fry until translucent.
  4. Add the coriander powder, cumin powder, turmeric, spinach and potatoes and combine well.
  5. Saute well for a couple of minutes.
  6. Sprinkle little water, cover and cook for sometime till they get cooked.
  7. Turn off the flame.
  8. Finally, add the lemon juice and give a nice stir.
  9. Serve hot with roti or rice.
