Crispy Breakfast Potatoes Recipe

Ingredients:
- 3–4 medium potatoes (Yukon gold or russet work well)
- 1 small onion, diced
- 1 small bell pepper, diced (any color)
- 2–3 tbsp oil (vegetable, olive, or avocado oil)
- 1 tsp garlic powder
- 1 tsp paprika (smoked or sweet)
- ½ tsp black pepper
- 1 tsp salt (adjust to taste)
- Optional: pinch of chili flakes or cayenne for heat
- Fresh parsley or green onions, chopped (for garnish)
Instructions:
- Prep the Potatoes:
- Wash and dice the potatoes into small cubes (about ½ inch).
- Optionally, parboil them for 5 minutes or microwave with a splash of water for 3–4 minutes. This helps them cook faster and become fluffier inside.
- Heat the Pan:
- In a large skillet (preferably non-stick or cast iron), heat oil over medium-high heat.
- Cook Potatoes:
- Add the potatoes in a single layer. Don’t stir too often—let them brown on each side.
- After 10–12 minutes, add chopped onion and bell pepper. Stir occasionally.
- Season:
- Sprinkle garlic powder, paprika, salt, and pepper. Add chili flakes or cayenne if using.
- Stir well and continue cooking until potatoes are crispy and golden brown (total 20–25 minutes).
- Finish:
- Turn off the heat and sprinkle with fresh herbs.
- Serve hot with eggs, toast, or avocado.
