Ingredients:

For the Chowmein:

  • 1 pack of noodles (200g)
  • 1 medium onion (thinly sliced)
  • 1 medium carrot (julienned)
  • 1 small capsicum (thinly sliced)
  • 1/2 cup cabbage (shredded)
  • 2-3 garlic cloves (minced)
  • 2-3 tablespoons soy sauce
  • 1 tablespoon chili sauce (adjust to taste)
  • 1 tablespoon tomato ketchup
  • 1 tablespoon vinegar
  • 1 teaspoon black pepper powder
  • Salt to taste
  • 2-3 tablespoons oil
  • Spring onions (optional, for garnish)

For the Rolls:

  • 6-8 chapatis or parathas (can be store-bought or homemade)
  • Green chutney or mayonnaise (optional)
  • Tomato ketchup or chili sauce for drizzling
  • Butter for toasting rolls

Instructions:

Step 1: Prepare the Chowmein

  1. Boil the noodles: Cook the noodles as per the instructions on the packet. Drain and set aside.
  2. Stir-fry the veggies: Heat oil in a pan. Add the minced garlic and sauté until fragrant. Add the onions and cook until translucent. Toss in the carrots, capsicum, and cabbage. Stir-fry for 2-3 minutes on high heat, keeping the veggies slightly crunchy.
  3. Season the noodles: Add soy sauce, chili sauce, tomato ketchup, vinegar, black pepper, and salt. Mix well.
  4. Toss the noodles: Add the cooked noodles to the pan. Stir well to coat them evenly with the sauce. Cook for another 2-3 minutes.
  5. Garnish: Add chopped spring onions if you like, and remove from heat.

Step 2: Assemble the Rolls

  1. Prepare the base: Take a chapati or paratha, and spread a thin layer of green chutney or mayonnaise if desired.
  2. Fill the roll: Place a generous portion of chowmein in the center of the chapati.
  3. Drizzle sauce: Add some ketchup or chili sauce on top of the noodles for extra flavor.
  4. Roll it up: Fold the sides of the chapati over the noodles and roll it tightly.
  5. Toast the roll: Heat a little butter on a tawa or pan. Toast the roll for 1-2 minutes on each side until golden brown and crispy.
