Kaju Malpua Recipe – Vegan

If you are a sweet lover and love having Indian mithais, then this fusion of kaju with Malpua is perfect for you. To make the batter you just need a handful of ingredients like refined flour, cashew flour, sooji, sugar and milk. Make sure you fry the Malpuas in desi ghee only to give them their signature aroma and flavour. If you don’t find readymade cashew flour, then just grind some light-roasted cashews in a blender and use them in the recipe. For festivals and occasions, ditch buying sweets from the market and instead make this homemade sweet for your friends and family.

If you want the Malpuas to be sugar-soaked, you can separately make a sugar syrup and soak the Malpuas in it before serving them. To make the sugar syrup, just boil 1/2 cup sugar and 1/2 cup water until it attains a two-string consistency. How to make Kaju Malpua

Step 1 – Mix the dry ingredients

In a large bowl, add refined flour, sooji, sugar, cashew flour and powdered green cardamom. Give a mix.

Step 2 – Make malpua batter

Add milk in batches and mix well to form a lump-free batter. You can add some extra milk to adjust the consistency of the batter.

Step 3 – Fry the malpuas

Heat some desi ghee in a kadhai for frying. Now pour a ladleful of batter in the middle of hot oil. It will automatically take the shape of a disc. Fry the malpuas from both sides until golden brown in colour.
