Khoya Kulfi Recipe

Kulfi is a popular dessert that everyone enjoys during summers. Today we are going to share with you the best recipe of khoya kulfi. Made from a mixture of milk, khoya, cardamom powder and dry fruits, this creamy kulfi is very tasty to eat.

Ingredients:

  • Khoya (Mawa): 200 grams
  • Milk: 1 liter
  • Sugar: 1/2 cup (adjust to taste)
  • Cardamom powder: 1/2 teaspoon
  • Saffron strands: a few (optional)
  • Chopped nuts: 1/4 cup (almonds, pistachios, and cashews)
  • Cornflour: 1 tablespoon (optional, for thickening)

Instructions:

  1. Prepare the Khoya:
    • Grate or crumble the khoya and set it aside.
  2. Boil the Milk:
    • Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
    • Once it starts boiling, reduce the heat to low and simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  3. Add Khoya:
    • When the milk reduces to about half its original quantity, add the grated khoya.
    • Mix well to ensure the khoya dissolves completely into the milk.
  4. Sweeten and Flavor:
    • Add the sugar and stir until it dissolves.
    • Add cardamom powder and saffron strands (if using), mixing well.
  5. Thicken the Mixture (Optional):
    • If you prefer a thicker consistency, dissolve the cornflour in a little cold milk and add it to the boiling mixture.
    • Stir continuously to avoid lumps and cook for another 5-7 minutes until the mixture thickens further.
  6. Add Nuts:
    • Add the chopped nuts and mix well. Reserve some for garnishing.
  7. Cool the Mixture:
    • Turn off the heat and let the mixture cool to room temperature.
  8. Freeze the Kulfi:
    • Pour the cooled mixture into kulfi molds or small bowls.
    • Insert a stick into each mold if desired.
    • Cover the molds with aluminum foil to prevent ice crystals from forming.
    • Freeze for at least 6-8 hours or overnight until fully set.
  9. Serve:
    • To demold the kulfi, dip the molds briefly in warm water.
    • Garnish with the reserved nuts and serve immediately.
