Here’s a delicious and easy recipe for spiced chickpea “nuts.” These crispy chickpeas make a great snack and are packed with flavor.

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1-2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare Chickpeas:
    • Drain and rinse the chickpeas thoroughly. Pat them dry with a paper towel to remove as much moisture as possible. The drier the chickpeas, the crispier they will get.
  3. Season Chickpeas:
    • In a large bowl, toss the chickpeas with olive oil until they are well-coated.
    • In a small bowl, mix together all the spices: cumin, paprika, coriander, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
    • Sprinkle the spice mixture over the chickpeas and toss to ensure they are evenly coated.
  4. Bake:
    • Spread the seasoned chickpeas out in a single layer on a baking sheet.
    • Bake in the preheated oven for 25-35 minutes, or until the chickpeas are golden brown and crispy. Stir them halfway through the baking time to ensure even cooking.

    • Remove the chickpeas from the oven and let them cool completely on the baking sheet. They will continue to crisp up as they cool.
