If you have access to freshly made rice noodles, there’s nothing better than that but if you don’t, stick rice noodles also work just fine. All you need to do it is soak them in boiling water for about 3 minutes until they start to become soft. Or you also boil them in water and soak them in ice-col water instantly. The recipe gives you plenty of room to make changes and you can adjust the spice quotient of the dish according to your preference. How to make Asian Vegetable Chow Fun

Step 1 Finely chop the vegetables

To start, take a chopping board and chop Chinese broccoli, slice the carrots, mushrooms and red bell peppers and finely slice onions.

Step 2 Prepare a liquid sauce mix

Now, in a bowl, add ginger, black bean garlic sauce, vegetable broth, hoisin sauce and whisk thoroughly.

Step 3 Heat the oil and toss in the chopped vegetables

Turn on the medium and put a frying pan over it and add sesame oil into it. Lower the flame and put in green onion slices, broccoli, bell pepper and corn.

Step 4 Cook the veggies and add rice noodles

Cook until vegetables become tender. Add hoisin mixture, noodles and stir. Pour 1/2 cup water, mushrooms and cook until the noodles and veggies are well coated with the mix. (Note: We are using fresh rice noodles, you can use rice sticks too.)

Step 5 Turn the flame off and serve

Turn off the flame and gently shift the noodles into serving bowls or platter. Serve hot.
