Shiitake Veggie Platter with Bamboo Rice is an amazing one-pot meal that requires stir frying shiitake mushrooms with carrot, snow peas, edamame and asparagus. These stir fried veggies are then tossed in light soy sauce and shiitake mushroom vegetarian sauce which tastes like oyster sauce. You can enjoy the stir fried veggies with boiled bamboo rice.

How to make Shiitake Veggie Platter with Bamboo Rice

Step 1 – Saute all the veggies

To prepare this delicious one-pot meal, put a pan on medium flame and heat oil in it. When the oil is hot enough, add garlic in it along with onions, and saute for 1-2 minutes or until the raw smell of onions goes away. Next, add all the vegetables one by one and saute them as well.

Step 2 – Add sauces in veggies and serve with bamboo rice

Then, add sauces and sprinkle sesame seeds on the top. The dish is ready, serve with any rice of your choice. I chose bamboo rice due to its nutritional value.

Ingredients of Shiitake Veggie Platter with Bamboo Rice

  • 4 soaked, boiled shiitake mushroom
  • 5 sticks steamed,chopped asparagus
  • 1/2 red bell pepper
  • 2 onion
  • 1 tablespoon refined oil
  • 2 tablespoon Shiitake mushroom vegetarian sauce
  • 1/2 cubed,boiled carrot
  • 1 handful blanched snow peas
  • 1/2 handful edamame beans
  • 5 cloves garlic
  • 2 tablespoon light soya sauce
  • 1/2 cup boiled bamboo rice
